The restaurant Visual discovers the most representative Barcelona sites

Barcelona, March 2, 2011. The restaurant Visual, located on the 23rd storey of the Hotel Torre Catalunya, presents Mosaic, its new tasting menu inspired in the most representative sites and architectural elements of Barcelona.
The team of professionals of the restaurant Visual, led by chef Álex Muedra, has created five original dishes that give diners a glimpse of the most famous sites in Barcelona. A succession of dishes, where the ingredients are combined masterfully to reconstruct representative sites and give diners a taste of them.
This gastronomic tour of the Catalan capital starts with the famous Liceu, a stave made of cream of aubergine where the notes are comfit potatoes topped with typical bites of the city that give diners flavours to remember: salted anchovy, marinated anchovy, Martini gelée, cockle and a cream of Idiazábal cheese.
The second stop on this architectural tour through the palate is called Fountains of Montjuïc. A veritable show of flavour where some delicate quail legs roasted in their jus dance on a carrot puree, with a cascade of asparagus sprouts and mange tout.
The middle dish had to be a walk along the Ramblas, in this case drawn on the plate with fried rice butifarra sausage, rabbit loin with onion comfit, broccoli stalks and undulated toast with baby vegetables.
Next, the restaurant Visual pays homage to Gaudí and his mark on the city of Barcelona with the dish Mosaic and chimney. For this dish, Muedra has built a tile with sautéed vegetables and ox tenderloin, and topped it with meat sauce and a phyllo pastry chimney.
Surrounded by the best views of the entire city, Forever Friends recreates Barcelona’s welcoming spirit and opens out to the world with a myriad of European desserts to share: tiramisu, foam of Catalan cream, marron glacé, apple strudel and chocolate truffles, the finishing touch of luxury for the evening.
With Mosaic, the restaurant Visual, led by chef Álex Muedra, returns to the front line of innovation and creative cuisine This first tasting menu of the year will be available until June 2011.
